Peanut Butter Nice Cream Bars
Ingredients
- 2 frozen bananas, very ripe
- 2 Tbsp peanut butter
- 1 tsp vanilla extract
- 2 tsp cinnamon
- For Chocolate coating: 1/2 cup semi-sweet chocolate chips + 3 Tbsp vegetable oil
Instructions
- In a high powered blender, blend frozen bananas until smooth.
- Add peanut butter, cinnamon and vanilla extract and blend until well combined.
- Scoop out banana mixture and shape into 2 bars on sheet pan lined with parchment paper.
- Once shaped, put sheet pan in freezer for at least 2 hours or until completely firm.
- Make chocolate sauce by adding chocolate chips and vegetable oil into a bowl. Microwave in a microwave safe bowl for 1 minute, checking at 30 second intervals to stir to not burn the chocolate.
- Once chocolate sauce is fully melted. Cover banana bars evenly. Put back in the freezer until firm.
